    I usually use a 500pf cap.  A 1000pf is too large and makes the mic too bright sounding (at least to my ears.)  I think any value from 100pf to 500pf is OK, also the resistance of the pot will effect this also, a small cap will sound "larger" over a higher resistance pot.  And the taper of the pot will also effect the feel.  Experiment on your own and use what works best for you, buy a 100pf, 150pf, 250pf, and a 500pf and use what sounds best to your ears.  Also silver micas will probably have a better overall tone than ceramic caps.
