In 1989 I played a regular gig in Kings Cross pub (a section of Sydney, Australia known for its clubs, casinos, and generally "open" atmosphere). Hecklers and fights, were more than common in the pub. 
The drummer was also part owner of the place. When things got out of hand he would stop playing(sometimes in mid song) and instruct the lighting guy to focus a spotlight on the offender(s). Form the stage he would then tell the rest of the audience that until THEY did something about the problem we would stop playing and the bartenders wouldn't serve any liquor. 

You should have seen the look on the troublemakers' faces when they were in the spotlight and realized they were the only thing between a crowd of Australians and their beer.
