you've picked some great ones, James. off the top of
my head, Eliades Ochoa of the Buena Vista Social Club
cut an album that Charlie Musselhite guested on called
"Sublime Ilusion." "Teje que Teje" is one i remember
that Charlie played on. Satan & Adam, on their "Mother
Mojo" album cover "Watermelon Man" which, while it was
written by Herbie Hancock, was made famous as a latin
jazz instrumental. Toots Thielemans played with Mongo
Santamaria (and, i think Dizzie Gillespie) on his live
"Summertime" album. Poncho Sanchez, the great latin
percussionist, recorded a latin-ized version of Ray
Charles' "Mary Anne" (featuring Ray himself!) that had
some nice latin-y harmonica on it. California's own
Damien Masterson a.ka. "El Hijo del Diablo" has cut a
few albums with heavy latin influence. I think one may
even have been partially recorded in Cuba, but i can't
be sure. Hugo Diaz, an (i think) Argentinian harmonica
player has recorded some tangoes on harmonica. one is
on a compilation CD of harmonica music, i think put
together by frenchman J.J. Milteau. and lastly, i've
heard that Howard Levy used to run with a latin band
here in Chicago, but i've never heard recordings of
their music.

p.s. - if you start adding in Brazilian music, the
list gets much much longer...
